Quick Jamaican Easter Spice Bun Recipe

Prep Time: 15 mins  |Cook Time: 60 mins  | Total Time: 1 hour 15 mins  | Serves: 6-8 hungry souls

Ingredients

  • 1 cup brown sugar
  • 2 egg
  • 1tbsp molasses
  • 1 tbsp browning
  • 1/4 cup melted butter
  • 1 cup Guinness stout or Malta
  • 1 cup dried fruits – 1/2 blended, half roughly chopped (cherries, raisins, mixed peel). Last year I used my leftover rum soaked dried fruit from my black cake recipe. It made the bun more mouthwatering.
  • 3 cups all purpose flour (do not use the enriched kind)
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • ½ tsp salt
  • 1 tbsp vanilla
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 3/8 tsp of allspice
  • 1 cup of cherries (optional) to top bun

Glaze

  • 1 tbsp honey
  • 1 tbsp strawberry or grape jelly
  • 2 tbsp butter

Let’s Make This

Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan with butter or baking spray and line with parchment paper. Allow the paper to hang over the pan. This will make it easy to lift the bun from the pan. Set aside.
